Cocktail Recipes

Over the years we have developed a list of a few cocktails that we are particularly keen on, including a few of our own invention. For posterity, here they are. Santé !

The Espressotini

A classic cocktail that perks you up and knocks you down at the same time. Kahlua is hard to find out here but despite this, it is one of the most-consumed cocktails at Port 80 – and this is the definitive recipe.

Chill Martini glasses. Mix all ingredients in a shaker with ice. Pour into glasses. Add a roasted coffee bean for decoration.

The Espressomintini

An inspired Christmas 2025 creation, it is a variant of the Espressotini with extra minty goodness. Our friend Benoît turned us on to a drink called Menthe Pastille and there just so happened to be a bottle kicking around.

Chill Martini glasses. Mix all ingredients in a shaker with ice. Pour into glasses. Enjoy with caution.

The Cap Ferret

My brother Dave gets the credit for this one which he concocted on a family trip to the coast. It’s another Espressotini-esque drink but with a sweet orangeness to it.

Chill Martini glasses or tumblers. Mix the all ingredients in a shaker with ice. Serve over lots of ice.

The Quarantini

A Port 80 creation we invented during the first covid lockdown. It has since become the default house cocktail. Crisp, refreshing and feisty.

  • Fresh lemon juice 1.5
  • Sparkling watera small pour

Chill Martini glasses. Mix the vodka, limoncello and lemon juice in a shaker with ice. Pour into glasses, filling to about 7/8ths. Fill the rest of the way with sparkling water.

The Déconfini

A variant of the Quarantini that was born in between lockdowns in 2020 when a friend of ours happened to produce a bottle of champagne just as we were making cocktails. Delicious, but highly debilitating.

Chill Martini glasses. Mix the vodka, limoncello and lemon juice in a shaker with ice. Pour into glasses, filling to about 7/8ths. Fill the rest of the way with Champagne.

The 24²

This is yet another riff on the Quarantini, and another fraternal collaboration born on our trip to Cap Ferret. You can substitute Triple Sec for the Cointreau.

  • Bittersa few drops

Chill Martini glasses. Mix the vodka, cointreau and lime juice in a shaker with ice. Pour into glasses, filling to about 7/8ths. Fill the rest of the way with fizzy water.

The Screwdriver Royale

Another Christmas 2025 invention and a definite keeper. Make sure you use fresh orange juice.

Chill Martini glasses. Mix the vodka and orange juice in a shaker with ice. Pour into glasses, filling to about 3/4s. Fill the rest of the way with Champagne.

The Margarita

The timeless classic. If the bar you are in makes a good margarita, you are in safe hands. We rarely have them out here because it’s impossible to find decent tequila, and pointless making a margarita with anything but.

Chill Margarita glasses and salt the rims using lime juice to moisten them. Mix the all ingredients in a shaker with ice. Pour, enjoy – and under no circumstances ever have a second one.

The Cattolica

I don’t recommend drinking these – they are ridiculously strong – but they are mighty tasty too. The idea for this deadly Margarita variant came to me in on a trip to Italy’s Adriatic coast.

Chill Margarita glasses and salt the rims using lime juice to moisten them. Mix the all ingredients in a shaker with ice. Sit down, you are in for a rough ride…

The Keverini

There was some leftover tequila at the end of our friend Kevin’s NYE 2025 visit, and he kindly brought us a bottle of homemade limoncello so we tried a mix of the Quarantini and the margarita. The result is delicious and quite deadly.

Chill Margarita glasses. Mix the all but the fizzy water in a shaker with ice. Fill the glasses most of the way and top with fizzy water.
